Completed near the end of the Taisho era, the Otaru Canal once carried goods through this gateway to Hokkaido. The canal’s stone warehouses, built around wooden frames, give the waterfront its distinctive character. Kakuryu is among the small shops lining Otaru Denuki Koji, an alley beside the canal.
Otaru’s signature ankake yakisoba at Kakuryu
Otaru is known for ankake yakisoba, stir-fried noodles covered in thick, savory gravy. At Kakuryu, we tested recipe after recipe, refining the broth, toppings and noodles until we found the flavor we wanted to serve.
Kakuryu’s ankake yakisoba
We make a clear chicken broth especially for our ankake yakisoba. It draws out the chicken’s natural savory flavor, with a gentle hint of scallion and ginger. We season it lightly so the ingredients can shine.
Clear chicken broth
The secret to the flavor
Our house gravy starts with clear chicken broth and carefully selected seasonings. With plenty of meat, seasonal vegetables, shrimp and squid, it makes for a hearty plate. Come hungry.
Generous toppings
Our house gravy
A noodle maker produces these noodles especially for our ankake yakisoba, so they pair well with our house gravy. We sear them until lightly crisp and fragrant, then pour the piping-hot gravy over them.
